Cuban Sandwich
Restaurants in Miami have a special press to make these delicious sandwiches. We've had good success pressing them on a griddle with a bacon press, or heavy cast iron pan, heated slightly to toast the top of the bread. Of course there is only one bread that works best, and that's Cuban bread. If you can't get your hands on any, a fresh loaf of French bread can be substituted. Once you've had a Cuban sandwich, you'll crave them forever! The same ingredients are also used on a sweet bread and called a "Media Noche" or "midnight" sandwich. Recipe (makes 4 large sandwiches):

4 individual Cuban bread loaves (or French bread )
4 tablespoons butter
1 pound roasted pork loin sliced thin
1 pound smoked ham sliced thin
1/2 pound sliced Swiss cheese
1 cup sliced dill pickles

Preheat the griddle. Slice the bread loaves in half. Smear the butter on both sides of each loaf of bread. Build each sandwich with the roasted pork, ham, cheese and pickles. Place the sandwich on the hot griddle and place heavy iron skillet or bacon press on top of the sandwich to flatten. Grill the sandwiches for 2 to 3 minutes on each side. Slice the sandwich in half and serve.
