Arroz con Pollo

1/4 C olive oil
2 bay leaves
1 cup rice
2 onions chopped
oregano
salt & pepper to taste
4 chicken pieces, sauteed
1 green pepper, chopped
1 tomato, diced
4-5 strands saffron (or yellow food coloring)
2 cloves garlic, minced
2 cups water peas for garnish

Heat oil in a large skillet. Add next 9 ingredients. Sauté until wilted. Add water. Bring to a boil. Add rice, chicken, and saffron (or food coloring). Bring to a boil again; stir and lower heat. Cook on low, covered, for 20 minutes. You can also bake it for 20 minutes at 375° if you prefer. Garnish.
